Caffeine is a tiny fraction of the bioactive compounds found in properly roasted coffee. Other substances include:
(1)antioxidant chlorogenic acid (CGA);
(2)active lactone (known as quinidine), formed from CGA3 when properly baked;
(3)Niacin;(4) minerals (manganese, potassium, iron, zinc, etc.).
The final caffeine content of each cup varies from 1% Arabica to 2% Robusta. Caffeine and caffeinol have been shown to have anticancer properties. Coffee brewing raises cholesterol levels in humans related to diterpenes.
Coffee also contains melanin, a brownish black substance with antioxidant activity
