Coffee in addition to refreshing, contains polyphenols, not only anti-oxidation, but also the protection of cardiovascular function. A recent symposium on food chemistry at the annual meeting of the american chemical society did provide new scientific evidence that coffee contains powerful antioxidants that protect blood vessels in the heart. The study was conducted by J.A. Vincent of the University of Scranton in Pennsylvania. Dr. Vinson discovered that coffee is high in Polyphenols, sometimes called flavonoids, which are powerful antioxidants that fight oxidation and blood clotting.
