The definition of "freshly roasted coffee" adopted by the American Fine Coffee Association (SCAA) is that no matter how it is packaged, it must be brewed within 3 to 7 days of baking and immediately after grinding into powder. The exhaust process of fresh coffee beans usually takes two weeks, which is the best time to taste fresh. One month is the longest acceptable period as long as you know how to preserve coffee beans.
