Freshly roasted coffee beans begin to exhaust (mainly carbon dioxide). When the gas is completely discharged, the coffee beans are no longer fresh.
You can grab a handful of beans, put them in an airtight plastic bag, squeeze the air out of the bag, tie a knot and seal it, then put the bag in a cool place and observe the next day that if the bag expands, the beans are fresh. Other clues to determine the freshness of coffee beans.
