Prolonging the contact time between water flow and coffee powder to achieve full extraction. Infiltration requires digging holes in the middle of coffee powder because the range of infiltration water is larger. If the peripheral powder layer is too thin, the powder may pile up to the center with the water flow, so that the fine powder floating in the periphery is over-extracted. In general, porous filter cups are more suitable for immersion extraction because the flow of water through the powder is more dispersed.
