Operation Red Cherry (OCR) is a project to improve the quality of small-scale farms. Dutch coffee and bean manufacturer Trabocca invites all farms in Ethiopia to produce small batches of beans of about 1500-3000 kilograms (25-50 bags) before the harvest season, and 100% ripe red cherries are selected by attentive and hard-working women.
The main producing areas participating in the Red Cherry Operation (OCR) include Yegashifi and Sidamo, all of which have a unique flavor and can fully show the Ethiopian beans. The agency selects the coffee it receives, and high bonuses are paid to farms that have passed cup quality tests at offices in Ethiopia and the Netherlands. The cup test pass score is above 88 to become a good coffee for Red Cherry Action (OCR).
